100% Palomino Fino from the Macharnudo vineyard, near Jerez de la Frontera, 30 km from the ocean. A lot of impact from the Levante, the dry, hot east wind that blows from inland. Continental climate. ABV as high as 13-13.5%. The soil is Albariza de Barajuela (layered limestone) This Palomino Fino is wood aged in 100% used sherry barrels and was under flor for seven months. Ageing in wooden barrels suppresses the fruit and exposes the stony minerality and salinity of the terroir without the interference of added alcohol. Therefore these wines are not fortified. As a consequence of their terroir this wine has a high concentration and alcohol volume but is low in salinity. Ripe white fruit aromas and what's more: rich, rounded, mineral, bold, ... This wine does not belong to a denomination and is simply a Vino de la Tierra de Càdiz. Gastronomically versatile. Goes with, for example, robust fish dishes, sardines, asparagus, ....
