
100% Palomino Fino from Vina El Corregidor, part of Pago Carrascal Alto. 45-year-old vines. Harvest happens in different passes. This Palomino is harvested at the very end of September in the final pass. Asoleo (further drying of grapes in the sun) for at least two days. This is followed by a light pressing and fermentation in botas. After fermentation, 5 grams of residual sugar per litre are left which are 'digested' in the same barrel in the following years, leaving behind the typical fresh volatility of this type of Raya. The name Raya must be understood in the context of the grapes and wines of nineteenth century Jerez: Palma, Cortado or Raya. Raya meant overripe grapes, a sort of 'vendange tardive'. 2016 was one of the best vintages of the decade, with relatively cool temperatures and wines that have both body and fraîcheur. During the last two weeks of the harvest there was a hot Levante (east wind), which ensured extra drying out of the grapes and even greater concentration.
