100% Albillo Mayor. Five months in 500 litre, French oak barrels. The Albillo is grown at an altitude of above 1,000 metres, close to Coruña del Conde, in the Province of Burgos. Harvested by hand, with no pressing involved, only the free-run juice is vinified. The terroir, and the very high altitude in particular, the extreme continental climate and the poor sand and loam soil determine the character of this unusual wine. Fresh apricot, grapefruit and pineapple aromas with subtle hints of flowers and herbs. Ageing in larger oak barrels gives this wine a nice elegance and depth. The wood is absolutely not dominating. Pairs, for example, with fried or roast salmon, paella, goat's cheese and prawns.
