
Sparkling wine of 100% garnacha from Cebreros. The vines are planted on a poor, sandy granite soil with little organic matter. Altitude: 800 meters.
Direct pressing of the whole grape bunches. Spontaneous fermentation in stainless steel tanks. Made according the 'méthode ancestrale', whereby -unlike the 'méthode traditionelle'- no second fermentation takes place in the bottle. The fermentation in the cuves is stopped by cooling down the must to 0°C. Further elevation and 'prise de mousse' in bottle with disgorgement in October 2019. No dosage (no added sugars). Only 2000 bottles bottled.
Natural wine, no added sulphites.
Pale, rosé sparkling wine. Complex aromas of red fruits such as strawberries, cherries, mixed with mint and balsamic. Fresh, round and elegant sparkling wine with a long, powerful aftertaste.
