
100% Tempranillo (known locally as Tinta de Toro). 120- to 150-year-old pre-Phylloxera vines. These are planted on the left bank of the Duero, on very small plots, with soil consisting mostly of sand and pebbles on a clay base. Fermentation partly in open stainless steel tanks, partly in wood barrels. Malolactic fermentation in wood barrels. 16 months' ageing in French oak barrels (80% new). Aromas of ripe black fruit and herbs like thyme and rosemary. Dulce de leche and toast tones. Warm and unctuous in the mouth, voluminous, complex. Nice acidity. Pairs nicely with fried and roast red meat, oven cooked meats, salty cheeses, ...
