
A white wine made from 100% Chardonnay, harvested at night. Three months' ageing in American and French oak barrels. Meantime, it sits on the lees with regular batonnage, a deliberate stirring back in of the yeast sediment so that it has more intense contact with the wine. This Chardonnay has a very expressive, exotic fruit and citrus nose, with refined and very subtle vanilla hints. Dry, fresh, balanced and juicy, with a nice finish. Goes well with shellfish and marinated, grilled and smoked fish, but also with pasta, salad, vegetables and rice.
