
100% palomino fino. Pago Paganilla is located 9km from the Atlantic Ocean. The parcel consists of 2 plots, each with a different kind of albariza: Barajuela and Tosca Cerrada. The pago is typified by the high percentage of diatoms (fossils). Spontaneous, uncontrolled fermentation in old botas. The wine then matures for another 8 months on those botas, of which the last 2 months under a thin layer of flor.
Complex aromas of apple, citrus, roasted pineapple. Dried herbs and yeast. As always with these Ube wines, the salty minerality prevails. Broad palate, with a saltiness that also makes the wine fresh and juicy (what the Spaniards call sapidez).
