100% palomino fino from old vines planted on the northernmost part of Finca La Charanga, a piece of vineyard that is part of Pago Maina, one of the legendary wine regions near Sanlúcar de Barrameda, close to the Atlantic Ocean. The soil is albariza barajuela with a high content of maritime fossils, which provide great concentration, structure and remarkable salinity.
The whole bunches were fermented without temperature control, in old 1000 liter botas. The wine matures a total of about 26 months in the barrel, of which the last 3 months under flor. Only 1000 bottles have been bottled.
Aromas of stewed apple, spice, chamomile, orange blossom against a salty background. Dry on the palate, the sapidez (a tasty freshness that comes from the minerality of this wine - in itself this wine has very little acidity) makes this Ube fresh, despite its strength and concentration. Impressive length.
With everything that comes from the ocean, even what is fried or grilled... the dishes can have some complexity.
