An oloroso is a more robust sherry wine that is raised oxidatively from the start. The wine is fortified to 17.5% alcohol so that no flor can develop and exposure to the air occurs immediately. Oloroso means fragrant: the wine has a lush character and a velvety taste. The years of maturation give it a broad and complex palate.

Drink an oloroso with grilled red meat, game or aged cheeses.
