100% Palomino Fino from 0.8 hectares of Pago de Maina, one of the best vineyards in the area, 5 km from the Atlantic Ocean. The vines are 80 years old and located at an altitude of 65 to 75 metres above sea level on a south facing slope.

This uses free-run juice from the first pressing, resulting in a yield of 31 hectolitres per hectare. 2019 was a year with a dry spring and a relatively cool summer. The grapes ripened very gradually and were healthy (no mildew or rot). Manual harvest on 5 September 2019. The must was fermented without débourbage or temperature control and with nothing but the natural yeasts from the skins. The wine then sat on the lees for five months (from September to January) under a yeast layer, a Saccharomyces Beticus flor, like a classic Manzanilla. Bottling took place at the end of May 2020.

This is a new generation Palomino wine: minerality and salinity come before fruit. Wild yeast and flor aromas with hints of ripe white fruit, cider and a dash of citrus with a mineral, gritty background. Its complexity will develop further over time. Full-bodied and dry in the mouth, the minerality comes back again in the taste. Low in acidity, its freshness places it in what the Spaniards so delightfully call 'sapidez', a delicious, expressive mineral salinity and a juicy, medium long finish.

The 'Cernícalo Primilla' refers to the Lesser Kestrel which circles continuously above the vineyards hunting for prey and thus keeping mice and rabbits away from the grapes.
