100% Palomino Fino. Old vines planted on Cerro de Obispo, a legendary piece of hillside of the equally legendary Macharnudo vineyard (orientated southeast and pruned in the local 'vara y pulgar' way). Albariza Tosca de Barajuela soil. Picked by hand. Cold fermentation in stainless steel tanks, after which the wine is aged under flor for a further year in 80-year-old sherry barrels. Bold citrus, citrus zest and Asian spice aromas. Saline background revealing that it was aged under flor. Fresh in the mouth, complex, full-bodied, juicy, with a little bit of bitterness in the finish. Pairs with lots of things: fruit, ripe and salty cheeses, smoked ham, mushroom dishes, dishes with soy sauce and other Asian spices..
