100% Palomino, exclusively oxidative ageing (at least 40 years), bottled in-house with the approval of the Consejo Regulador of D.O. Jerez y Manzanilla. Sumptuous nose of dried figs, red fruit jam, nut liqueur, beeswax, cedar, tobacco, ... Supported by a nice, citrusy acidity. Rich in the mouth with a nice balance between the roundness of dried fruit and berries and the same citrusy acidity. Very long finish with hints of citrus and toast. Bodegas Urium acquired a large number of barrels from the late almacenista Josefa Pérez Rosaso. The oldest barrels are kept in a small bodega behind the church of Santiago in Jerez. The barrels are looked after carefully but as there are few bottlings, their average age is rising fast.
