100% Palomino Fino from Pago Balbaina Alto. 9 km distance from the ocean. Tosca Cerrada soil, a harder sort of Albariza with a lower lime content. 45-year-old vines on average. The average age of the solera is reckoned to be 10 years. This 20-barrel solera has not been 'refreshed' since 2012. The winemakers selected seven barrels which retained adequate Manzanilla characteristics. The rest will be bottled later as Amontillado. Chalk, straw and salted apple aromas. Fresh and elegant in the mouth; a bit creamy. Very saline.
