100% Palomino Fino. Typical Manzanilla with its own soft character. Seven- to eight-year solera, 'en rama' bottling with minimal filtration and stabilisation. Pale to straw yellow. Dry and fresh, with a piercing camomile, almond and yeast nose. Refined, balanced, light bitter flavour with saline tinges. Delicious with all sorts of tapas, Iberian ham (Bellota), grilled vegetables, artichoke, octopus, ... You can match it to almost any fish or shellfish dish, cold, steamed or roast: grilled prawns, fish stew, marinated herring/mussels, sea bass in a salt crust and spicy, Asian cuisine.
