100% Palomino Fino. The vineyard, La Callejuela, is part of Pago de Hornillo just outside Sanlúcar de Barrameda and very close to the bodega. It is south/southwest facing with the direct impact of the Poniente (cool, damp west wind), which results in ABV of up to 12%. The soil is pure Albariza de Tosca Cerrada (rocky chalk) and ensures a middling concentration and middling minerality.

Wood ageing: seven months under flor in 100% used sherry barrels. This wine is not fortified either. The technical term for this is a 'sobretabla'. It is a white wine which underwent static flor ageing 'in the waiting room' prior to being added to the solera. It is bottled before being dispensed to make sherry. Ageing in used wooden barrels causes the fruit to dissipate and exposes the minerality and salinity of the terroir, without disturbing the added alcohol and without leaving impressions of wood behind it.

This wine does not belong to a denomination and is simply a Vino de la Tierra de Càdiz.

Very gastronomically versatile. Very dry, mineral and saline. Perfect accompaniment to all kinds of seafood, lobsters and, for example, oysters.
