100% Chardonnay from the 'Finca Pinarejo' plot, situated at a 750 metre altitude with a rock and limestone soil. Harvested at the end of August. The whole grapes are first selected in the bodega and then lightly pressed (maximum 40% juice in order to preserve the characteristics of the terroir as much as possible). The base wine is fermented for a very short time in French oak barrels. This is followed by a secondary fermentation in the bottle for at least 36 months. Brut Nature: no added sugar, 1.5 grammes of residual sugar per litre. Complex ripe white fruit, toasted bread and nut aromas, ... mineral and balanced. Lively and velvety in the mouth.
