100% Palomino Fino from the La Callejuela plot, part of Pago de Hornillo, just outside Sanlúcar de Barrameda. It is south/southwest facing and directly impacted by the Poniente, the damp, cold wind that blows in off the Atlantic Ocean, the mouth of the Guadalquivir and La Donana National Park. The soil is an Albariza Tosca Cerrada (a mix of rocks and chalk). This gives an average concentration and minerality. The wine is aged statically in old, used sherry barrels and is kept under flor for four years. Its location (near the ocean) and soil, determine that this is the most elegant, saline and accessible Manzanilla from the solera de almacenistas area, and the one with the greatest impact of flor too.
