100% Palomino Fino from their own Añina vineyard (halfway between Jerez de la Frontera and Sanlúcar de Barrameda, 15 km from the ocean). It is east facing with a moderate impact from the Levante (hot and dry wind from the inland), which gives it a somewhat higher ABV of 12,5% - 13%. The soil consists on the one hand of Albariza de Barajuela with a chalk layer that ensures concentration and minerality and on the other of Antehojuela with its porous chalk that ensures minerality and finesse. The climate is very moderate. Wood fermentation in 100% used sherry barrels. The wine is left for seven months under a not very intense flor. This wine does not belong to a denomination and is simply a Vino de la Tierra de Càdiz. This very fluid white wine has had little impact from the flor and can be classed as a base wine for Palo Cortado. Totally different in style compared to Hacienda en La Choza. A lot of volume and concentration but much less salt and minerality than the other two wines. Extremely multi-faceted and gastronomic. Wine preferably drunk alongside fish dishes, grilled fish and various tapas. Also a perfect partner for (light) cheese dishes and would bring out the best in asparagus.
