Collection: Pedro Ximénez (PX)
Not every wine from the sherry region is made from the palomino grape. The pedro ximénez is a sweet grape that is left to dry in the Andalusian sun for another 10 to 15 days after harvesting (process is calles asoleo). The wine then matures further in a solera that sometimes remains for many decades. The result is an incredibly complex, sweet wine that is especially paired with ripe blue cheeses or desserts with bitter black chocolate.
