75% Palomino Fino, 25% Pedro Ximénez. The Palomino is in part planted at Pago Macharnudo and part at Pago Añina. The Pedro Ximénez comes from Montilla-Morilles. Solera system with three criaderas, 20 years old. 2 sacas per year. Caramel, syrup, honey, citrus and dried apricot aromas. Elegant and supple in the mouth, not too mellow and still very fresh in the mouth, despite its age. Pairs with desserts, blue cheese, melon or orange ice cream. Can also accompany ham or salt fish.
