100% Tempranillo (known locally as Tinto Fino). Vineyards at an altitude of 700 to 850 metres, cold winters and hot summers, but also big temperature fluctuations between day and night, which allow the grapes to ripen slowly with excellent acidity levels. After picking, the wine is aged for nine months in French, American and Central European oak barrels. Then it is bottled without filtration. Expressive nose, complex aromas of ripe blueberry, herbs, sweet and sour cherry, a little liquorice root, a whiff of coffee and burnt toast. Very balanced and structured in the mouth, with enough acidity and resolved tannins. Long, juicy finish. Delicious with winter stews. Dishes with fried or roast white and red meat. With a grilled sirloin or T-bone steak.
