100% Palomino Fino from the El Notario plot to the north of Macharnudo Alto. The vineyards are located at an altitude of 118 metres, 18 km from the coast. An Albariza Barajuela soil with a relatively high clay content. The grapes undergo an eight-hour asoleo (drying in the sun). Fermentation in botas, without temperature control and with autochthonous, wild yeasts. The winemakers leave the wine to age for ten months under a thin layer of flor. Processed organically. Outspoken mineral sensations (i.e. flint), ripe white fruit and herb aromas. Full-bodied in the mouth, fresh, saline, complex.
