Gran Reserva from 20% Macabeo, 60% Xarel.lo, 20% Parellada. Grapes from the Clos Nostre Senyor plot. The base wine is fermented in chestnut barrels and then aged for a further 10 months in the same barrels. Secondary fermentation in excess of 120 months! The bottles are capped with natural cork for the secondary fermentation. Manual dégorgement. Under 3 grammes residual sugar. Very fine bubbles. This Clos Nostre Senyor is a particularly elegant Cava, of great aromatic richness: pomegranate, dried fruit, toast, brioche, vanilla, cocoa, ... Creamy, polished and balanced in the mouth, integrated bubbles and acidity. Long, complex finish. Pairs with lots of things, every dish on the menu.
