A red wine from 50% Syrah and 50% Petit Verdot. Between 5,000 kg (for Syrah) and 3,500 kg (for Petit Verdot) grapes per hectare, harvested by hand at night to avoid oxidisation. Part of the grapes are not destemmed. Each variety is vinified separately in stainless steel tanks. A short, cold maceration at 5°C followed by 20 days fermentation in minutely controlled temperatures with intervals between 15°C and 28°C. After the malolactic fermentation, Luis Pérez makes his selection for the assemblage which will age for a further 11 to 14 months in French oak barrels of an average age of three years. The wine is neither filtered nor clarified. An intense, scented nose, with hints of bottled cherries, aromatic herbs, cocoa, graphite and truffle. Firm, solid, complex, with ripe tannins and a long, intriguing finish. Good with vegetable-heavy dishes, grilled or otherwise. Also perfect with a paella or with small game like duck. Can also be enjoyed with dessert, with white rind cheeses, dried fruit or even chocolate.
