100% Palomino Fino of 0.8 hectares of Pago de Maina, one of the best vineyards in the region, 5 km from the Atlantic Ocean. The vines are 80 years old, standing at an altitude between 65 and 75 meters above sea level, sloping southwards.
2020 was an exceptionally cold and wet year with little sugar build-up in the grapes. Manual harvest on September 3, 2020 with an alcohol potential of 12° and a low acidity. Fermentation without groin based on the natural yeasts on the skin. All vessels were filled to about 80% to allow flor formation. The flor formation went perfectly from October to the end of February. As temperatures rose in March, all barrels were consolidated and filled to the top.
This is a new generation Palomino wine: minerality and saltiness are more prominent than fruit. Wild yeast and flor aromas, with hints of ripe white fruit, cider and a hint of citrus against a mineral, stony background. The complexity will grow with time... Full and dry in the mouth, the minerality is also reflected in the taste. Low in acidity, the freshness is in what the Spaniards so nicely call the 'sapidez', a tasty, expressive mineral saltiness and a juicy, medium-long finish.
