100% Pedro Ximénez. This unusual, sweet wine is made from grapes which usually come from the Montilla Moriles region near Córdoba and which are sun dried (asoleo) for two weeks after harvesting. The resulting 'raisins' are pressed to launch fermentation. This fermentation is almost immediately stopped by adding alcohol (up to 15% ABV), making for a naturally sweet wine. 20-year solera in oak barrels. An intense, dark, mahogany colour with an exuberant bouquet of dates, dried figs, raisins, honey and clear coffee, cocoa and tiramisu touches. Rich and creamy in the mouth with enough residual acidity and a never-ending finish with impression of toast. A perfect topping for vanilla ice cream, but also excellent with bitter chocolate (noir de noir), citrus desserts, or for contrast combine this very sweet wine with salty blue cheese (like Cabrales or Roquefort), and of course, the Pedro Ximinez can also be a dessert on its own.
