100% Tintilla de Rota from Pago Callejuela. Harvested by hand. Slow fermentation in stainless steel tanks for about 25 days at room temperature. When the wine has about 8% ABV, it is fortified to 15% ABV. Then the wine is aged for a further six months in old, American oak barrels. Residual sugars: 180 grammes per litre. Lush young and ripe red fruit aromas. Bold, complex flavours of the same fruit. Jammy and a bit velvety. The residual sugars are kept nicely in balance by the remarkable acidity.
