100% hondarrabi zuri. The grapes are selected from the oldest vineyards of an area known as 'Basigo de Bakio'. The soil on the different plots varies: clay, marl, limestone and sandstone. Traditional harvest from late September to mid October. Short cold maceration. The grapes from the different plots are vinified separately, only autochthonous yeasts are used and as little sulphite as possible is added. After fermentation, the wine rests for several months 'sur lie' in stainless steel cuves.
Subtle, complex aromas of citrus, fennel, thyme, dried straw,... against a mineral background. Fresh and crispy in the mouth, wide variegated with a nice evolution. Small bitterness in the aftertaste. This wine is considered a reference for Txakoli from the region.
