100% Palomino Fino from the Plantalina plot at Pago Balbaina Alta. 40- to 50-year-old vines, planted on Albariza. Picked by hand. Upon their arrival at the bodega, the grapes are cooled to 4°C and stored for the first 24 hours. Alcoholic fermentation in stainless steel tanks, with regular pigeage. After 25 days the wine is transferred to Oloroso barrels where malolactic fermentation takes place. Ten months' additional ageing in the same barrels. La Fleur is not fortified. Certified organic. Only 612 bottles were made. Delicate tropical fruit, quince and herb aromas with a nutty, toasty background. The Albariza soil's minerality can be clearly distinguished. Full-bodied attack, nice concentration, unctuous, complex, long finish. Pairs with poultry, fish, shellfish and crustaceans.
