100% Tintilla de Rota, planted on a pure Albariza soil. Fermatation lasts about 15 days and takes place in clay pots. No artificial yeasts are used, only the autochthonous yeasts found on the grapes themselves. Six-month malolactic fermentation. Then the wine is transferred to French oak barrels to age for a further 12 months. Bottled without filtering. Certified organic. Expressive nose with aromas of red fruit, balsam and Mediterranean herbs like thyme and rosemary. Hints of cinnamon, pepper and camomile with a mineral background (the Albariza). Lively attack in the mouth, full-bodied, soft, almost sweet tannins, with a saline freshness. Pairs with poultry, braised meat and aged cheeses.
