100% garnacha tinta from the D.O.P. Cebreros (vino de pueblo - village wine) from old vines. Soil of granite and slate at an altitude between 750 and 1060 meters. Late manual harvest, between 10 and 25 September. The grapes are cooled down to 0°C after harvest. Fermentation takes place in concrete cuves, partially with whole bunches of grapes (this is closely monitored gathering data on soil and height of the various plots - but everything happens by spontaneous fermentation). 12 months aging in French oak vats of 15,000L and concrete cuves of 16,000L. Light filtering.
Aromas of fresh red fruit, with hints of flowers. Fresh in the mouth, light, juicy, with a nice long finish and nice acidity.
