100% Macabeo. The grapes are picked in the Vega del Magro area from approximately 25-year-old vines. After picking by hand the grapes are gently pressed. Only the first pressing is used. This is followed by a two-week fermentation at 16°C to 18°C. The second, 18-month fermentation takes place in the bodega's cellars at a constant, 16°C temperature. Extra Brut means that a maximum of 6 grammes of sugar is added after the secondary fermentation. Fine bubbles, citrus and apple aromas with hints of fresh bread and yeast. Sparklingly fresh in the mouth, nicely in balance with a soft bitterness in the finish.

We discovered this estate through its outstanding Cavas. We subsequently added a number of extremely agreeable and reasonably priced, quality wines with the local, fruity Bobal grape taking the lead.
