100% Palomino from their own Añina vineyard (midway between Jerez de la Frontera and Sanlúcar de Barrameda). East facing with a moderate impact from the Levante (hot and dry wind from inland) making the ABV somewhat higher at 13%. Mix of two soil types: Albariza de Barajuela and Antehojuela. Location at 15 km from the ocean between Sanlúcar de Barrameda and Jerez. Static ageing (the Manzanilla stays in the same barrel) for four years under flor. Old, used sherry barrels are used for this. Añina is the most fluid and intense of the three wines in the range. Very expressive. Gastronomically versatile.
