A Cava from 100% Pinot Noir (i.e. a 'blanc de noirs') with a 30-month secondary fermentation in bottle. This Brut Nature, a Cava without added sugars and therefore very dry, is a beautiful golden colour with the typical evolution of Pinot Noir. Complex and elegant in the nose, a bit saline and mineral. Fruit and violet aromas. This complex Cava can accompany an entire menu, from aperitif, through fish, white and red meat, to cheese and chocolate.
