100% Syrah from the Valtosca and Aguilanda vineyards - sandy soil topped with limestone. Three-day cold pre-fermentation. 25 to 30% full bunches are used (i.e. the grapes are not destemmed). Exclusively wild, autochthonous yeasts. Alcoholic fermentation in 500 litre, French oak foudres. After that, the wine is aged for a further 14 months in the same foudres. Its volume is the perfect expression of the characteristics of Syrah on limestone. Processed organically. Ripe black fruit, Mediterranean herb and toast aromas. Floral.
