100% hondarrabi zuri. The grapes come from vineyards in the Zumetxaga region, with extremely poor soils of sand and shale. Harvested between 10 and 12 October. After a short cold maceration follows a fermentation with native yeasts. No sulfites are added. After the alcoholic fermentation, a partial malolactic fermentation also took place in the stainless steel cuves. The wine matures for a few months on the lees.
Powerful aromas of ripe white fruit, spices, hazelnut,... Vertically integrated in the mouth, with salty notes, strong acidity.
